Introduction
Founded in 2011 by Sébastien Caillat and Florence Lamy, Domaine Lamy-Caillat is a micro-estate working just 1.2 hectares across Chassagne-Montrachet and Saint-Aubin. Everything is done in-house with an artisanal, patient, low-intervention approach inspired by classic 1960s white Burgundy. Scarce, obsessively detailed, and widely praised, these wines are all about purity and precision.

In the Vineyard
Chardonnay vines in enviable Chassagne and Saint-Aubin sites, many old-vine and high-density. Farming is sustainable and largely organic in practice (uncertified), guided by observation rather than dogma. Yields are kept low and harvesting is done by hand to deliver pristine fruit.
In the Cellar
Grapes are pressed in an old Vaslin mechanical press; must settles then goes straight to barrel. Native yeast primary and malolactic fermentations unfold slowly in a cold, humid cellar. Élevage is distinctive: one year in oak followed by a second year in stainless steel on lees (some cuvées up to ~28 months). Bottling is by hand, unfiltered, with only occasional fining.

Style
Elemental white Burgundy: crystalline, mineral, and deeply textural. High dry extract, chalky grip, and saline length define the profile. Built to evolve—taut in youth, unfolding into layered complexity—each climat speaks clearly without a house-style gloss.

Chassagne-Montrachet Premier Cru Les Champs Gains
Moderately deep soils; vines planted in 1980. ~750 bottles/year. A touch richer in orchard fruit, balanced by firm minerality and creamy, lees-driven texture.
Chassagne-Montrachet Premier Cru La Romanée
High, stony, shallow soils (planted 1961); hot afternoons, cool nights. ~1,400 bottles/year. Citrus, white flowers, crushed stone; ripe yet tensile with long, mineral finish.
Chassagne-Montrachet Premier Cru Les Caillerets
Vines from 1960 & 1982 on thin pebbly marl over pure limestone. ~3,500 bottles/year. The most laser-focused and saline; architectural precision approaching grand cru breadth.
Chassagne-Montrachet “Pot Bois”
East-facing parcel (planted 1963) above Les Caillerets. ~1,500 bottles/year. Village in name, premier-cru pedigree in the glass—breadth, freshness, and hallmark purity.
Saint-Aubin En l’Ebaupin
Vines planted 2015; first vintage 2018. Secluded limestone slope with hot days, cool nights. Racy, floral, bright acidity, and a saline edge.
Bourgogne Blanc Les Grandes Corvées
At the foot of Chassagne on heavier clays; first bottled 2017. Vinified with the same extended élevage—surprisingly deep, creamy texture with a crisp, saline finish.
